Φαλάφελ_3Το ξέρατε ότι για να φτιάξετε τα αυθεντικά φαλάφελ δεν χρειάζεται να βράσετε τα ρεβίθια; Απλά τα μουλιάζετε, ρίχνετε όλα τα υλικά στην κουζινομηχανή και… έτοιμο το μίγμα! Το μόνο που πρέπει να προσέξετε είναι να έχετε στραγγίξει καλά τα ρεβίθια και το μαϊντανό για να μην έχουν υγρασία η οποία επηρεάζει αρνητικά τη συνοχή του μίγματος.

Υλικά: (για 25 τμχ)
  • 1 κούπα ρεβύθια
  • 1 κούπα κρεμμύδια κομμένα στα 4
  • 4 σκελίδες σκόρδο
  • 1 κούπα μαϊδανό
  • 2 κ.γ. baking powder
  • 1 κ.γ. ανθό αλατιού
  • φρεσκοτριμμένο μαύρο πιπέρι
  • 1/2 κ.γ. κουρκουμά
  • 1/2 κ.γ. κύμινο
  • πιπέρι καγιέν (κατά βούληση)
  • 1 κούπα σουσάμι (ή τριμμένο κρίθινο ντάκο)
  • ελαιόλαδο για το τηγάνισμα
Εκτέλεση:
  • Μουλιάστε τα ρεβίθια σε νερό για 8 με 12 ώρες.
  • Σουρώστε τα και βάλτε τα στην κουζινομηχανή. Δουλέψτε τα για 1 λεπτό για να κοπούν πολύ ψιλά.
  • Προσθέστε το κρεμμύδι, το σκόρδο, το μαϊδανό, το baking powder για τα μπαχαρικά και  δουλέψτε τα μέχρι να γίνουν αλοιφή.
  • Σκεπάστε τα και αφήστε τα 2 ώρες στο ψυγείο για να σφίξουν.
  • Πλάστε μικρά μπαλάκια, κυλήστε τα στο σουσάμι και τηγανήστε τα σε δυνατή φωτιά σε βαθύ τηγάνι ή φριτέζα.
  • Στραγγίξτε τα σε χαρτί κουζίνας.
  • Σερβίρονται ζεστά σαν κυρίως πιάτο ή τα κάνετε σάντουιτς σε αραβική πίτα με αβοκάντο, μαρούλι και σάλτσα με λεμόνι & ταχίνι ή μουστάρδα.
Extra Tips:
  • Εάν το μίγμα είναι πολύ υγρό για να το πλάσετε και διαλύεται, προσθέστε λίγο αλεύρι ή τριμμένο κρίθινο ντάκο.
  • Εάν προτιμάτε να τα ψήσετε, προσθέστε στο μίγμα 1/4 κούπας ελαιόλαδο και αλεύρι (ή τριμμένο κρίθινο ντάκο) όσο πάρει, για να πλάθεται σε μπαλάκια.

Do you know that you don’t have to boil the chickpeas if you want to make falafel? You just soak them and blend them in the food processor with the other ingredients and… voila… the mixture is ready!
The only secret is to strain the chickpeas and parsley very-very well because otherwise the mixture will be too wet to form the falafel.

Ingredients: (for 25 pcs)
  • 1 cup chickpeas
  • 1 cup onions cut in fours
  • 4 garlic cloves
  • 1 cup parsley
  • 2 tsp baking powder
  • 1 tsp fine sea salt
  • freshly grounded black pepper
  • 1/2 tsp turmeric
  • 1/2 tsp cumin
  • cayenne pepper (to your taste)
  • 1 cup sesame seeds (or finely grounded barley rusks)
  • extra virgin olive oil for frying
Instructions:
  • Soak the chickpeas for 8-12 hours
  • Drain them very well and blend them in the food processor until finely chopped.
  • Add the onion, garlic, parsley, baking powder and the seasoning and blend them until they form a paste.
  • Cover the mixture and put it in the refrigerator for 2 hours.
  • Form the mixture into bite-sized balls, roll them in sesame seeds and deep-fry them in olive oil.
  • Place them on kitchen paper to absorb the excess oil.
  • Serve them hot as a main course or make a sandwich with avocado, lettuce and lemon & tahini sauce or mustard.
Extra Tips:
  • If the mixture is too wet to form the balls, add some flour or finely grounded barley rusks.
  • If you want to bake them in the oven, add to the mixture 1/4 cup extra virgin olive oil and enough flour (or finely grounded barley rusks) to make the falafel balls.
